Our winery (or ‘wine cellar’) was recently established in 2023 and is equipped with the most modern equipment, including stainless steel tanks. These tanks have several significant advantages, such as precise control of fermentation temperature to preserve the fruity aromas in the wine, durability, hygiene, and shape. The latter ensures efficient circulation of the juice during fermentation, which can improve the extraction of color and flavor. We always strive for high quality and consistency. With a variety of stainless steel tanks, we can ferment and potentially blend different grape varieties to create expressive wines.
A glimpse into our wine cellar
Before long, oak barrels will also be introduced. These serve various functions, including micro-oxidation. The porous nature of wood allows limited exposure of the wine to oxygen, which can soften tannins (responsible for that drying sensation in your mouth) and help the wine develop and mature.
Just as with our lodges, sustainability plays a significant role here as well. Heat and electricity are generated by a heat pump and solar panels. Additionally, we aim to fully process everything from the production process, ultimately using it as compost. Everything starts with the soil. As winemakers, that is our principle: ensuring a nutrient-rich and healthy soil with – very importantly – an active soil life.
